Polish Potato Pancakes

Here’s a classic recipe for Polish Potato Pancakes (Placki ziemniaczane) — crispy on the outside, tender inside, and perfect with sour cream or applesauce 🥔✨


🥔 Ingredients (Makes ~8 pancakes)

  • 2 lbs (900 g) potatoes, peeled
  • 1 small onion
  • 2 large eggs
  • 3–4 tbsp all-purpose flour
  • 1 tsp salt
  • 1/4 tsp black pepper
  • Oil for frying (vegetable or sunflower oil)

🔪 Instructions

1️⃣ Grate Potatoes & Onion

  • Grate potatoes finely using a box grater or food processor.
  • Grate the onion and mix with potatoes.
  • Optional: squeeze excess water from potatoes using a clean cloth for extra crispiness.

2️⃣ Mix Batter

  • Add eggs, flour, salt, and pepper to the potato mixture.
  • Mix until well combined — it should hold together but not be too thick.

3️⃣ Fry Pancakes

  • Heat 1–2 tbsp oil in a skillet over medium heat.
  • Spoon 1/4 cup of batter per pancake into the skillet, flattening slightly.
  • Fry 3–4 minutes per side until golden brown and crispy.
  • Drain on paper towels.

4️⃣ Serve Hot

  • Traditional toppings: sour cream, applesauce, or smoked salmon for a savory twist.

💡 Tips

  • For extra crispiness, remove as much liquid as possible from potatoes.
  • Fry in batches, keeping the oil hot.
  • Optional: add a pinch of garlic powder or chopped herbs for flavor variations.
