🥐 Reuben Crescent Bake

A warm, savory twist on the classic Reuben Sandwich, this easy casserole layers crescent dough with corned beef, sauerkraut, cheese, and dressing—perfect for a quick dinner or party dish.


Ingredients

  • 2 cans refrigerated Crescent Roll Dough
  • 2 cups sliced Corned Beef
  • 1½ cups drained Sauerkraut
  • 2 cups shredded Swiss Cheese
  • ½ cup Thousand Island Dressing
  • 1 Egg, beaten
  • 1 teaspoon Caraway Seed (optional, for rye-bread flavor)

Instructions

1️⃣ Preheat oven
Set oven to 375°F (190°C) and grease a 9×13-inch baking dish.

2️⃣ Create the bottom crust
Unroll one can of crescent dough and press it into the bottom of the dish, sealing the seams.

3️⃣ Layer the filling
Add layers in this order:

  • Corned beef
  • Sauerkraut (well drained)
  • Swiss cheese

4️⃣ Add dressing
Drizzle Thousand Island dressing evenly over the layers.

5️⃣ Top crust
Unroll the second can of crescent dough and place it over the filling. Pinch seams to seal.

6️⃣ Finish the top
Brush with beaten egg and sprinkle with caraway seeds if using.

7️⃣ Bake
Bake 25–30 minutes, until the crust is golden brown.

8️⃣ Cool and slice
Let it rest for about 10 minutes before cutting into squares.

  • Serve with Pickle spears
  • Pair with a simple Green Salad
  • Add extra Thousand Island Dressing for dipping

✅ Tip: Squeeze as much liquid as possible from the sauerkraut to keep the bake from becoming soggy.
