Roasted cauliflower with garlic and mushrooms

Posted on March 11, 2026 by Admin

Here’s a simple and delicious recipe for Roasted Cauliflower with Garlic and Mushrooms—a savory, caramelized side dish perfect for any meal. 🥦🍄🧄

Ingredients

  • 1 medium Cauliflower, cut into florets
  • 8 oz Mushrooms, sliced (white or cremini work well)
  • 4 cloves Garlic, minced
  • 3 tablespoons Olive Oil
  • Salt and Black Pepper to taste
  • Optional: Fresh Thyme or Parsley for garnish

Instructions

  1. Preheat oven to 425°F (220°C).
  2. Toss vegetables
    • In a large bowl, combine cauliflower florets, sliced mushrooms, and minced garlic.
    • Drizzle with olive oil, season with salt and pepper, and toss until evenly coated.
  3. Spread on a baking sheet
    • Arrange in a single layer for even roasting.
  4. Roast
    • Bake for 25–30 minutes, stirring halfway, until cauliflower is golden and tender and mushrooms are nicely caramelized.
  5. Garnish and serve
    • Sprinkle fresh thyme or parsley on top for extra flavor.

Tips for Perfect Roasting

  • Don’t overcrowd the pan; vegetables roast better in a single layer.
  • For extra depth, add a splash of Soy Sauce or Balsamic Vinegar during the last 5 minutes of roasting.
  • Leftovers reheat well and can be tossed into Salads, Pasta, or Grain Bowls.

✅ Serving idea:
Pair with Grilled Chicken, Salmon, or enjoy as a vegetarian main dish with quinoa or rice.
