🥜🍫 Scotcheroos (No-Bake)

Ingredients (makes ~16 bars)

  • 3 cups Rice Krispies cereal
  • 1 cup peanut butter (smooth or crunchy)
  • 1 cup light corn syrup
  • 1 cup sugar
  • 1 cup butterscotch chips
  • 1 cup semi-sweet chocolate chips

Instructions

  1. Prepare pan
    • Line a 9×13-inch pan with parchment paper or lightly grease.
  2. Cook peanut butter mixture
    • In a medium saucepan, combine peanut butter, corn syrup, and sugar.
    • Heat over medium, stirring until smooth and fully combined.
  3. Mix with cereal
    • Remove from heat and stir in Rice Krispies until evenly coated.
    • Press mixture firmly into the prepared pan.
  4. Make the chocolate-butterscotch topping
    • In a small saucepan or microwave, melt butterscotch and chocolate chips together until smooth.
    • Pour over the pressed Rice Krispies mixture and spread evenly.
  5. Chill
    • Refrigerate 1–2 hours until firm.
  6. Cut and serve
    • Cut into squares or rectangles. Store in an airtight container.
