🌽 Coating

  • 1 cup yellow cornmeal
  • ½ cup all-purpose flour

1. Soak the Fish

  1. Mix buttermilk and hot sauce.
  2. Soak catfish fillets 20–30 minutes (removes any muddy taste).

2. Prepare the Coating

3. Coat the Catfish

  1. Remove fillets from buttermilk, let excess drip off.
  2. Dredge thoroughly in cornmeal mixture.

4. Fry
