Stuffed pepper soup

Posted on March 17, 2026 by Admin

Stuffed pepper soup is basically all the cozy flavor of stuffed peppers—just easier, faster, and all in one pot.

🍲 What it is

A hearty soup made with:

  • Bell peppers
  • Ground meat (usually beef)
  • Rice
  • Tomato-based broth
  • Herbs and spices

It tastes like classic stuffed peppers but without the hassle of stuffing and baking.

🥣 Simple Stuffed Pepper Soup Recipe

Ingredients:

  • 1 tbsp oil
  • 1 onion (chopped)
  • 2–3 bell peppers (any color, chopped)
  • 300–400g ground beef (or chicken)
  • 2 cups tomato sauce or crushed tomatoes
  • 3 cups broth (beef or chicken)
  • ½ cup rice (uncooked)
  • 2 cloves garlic
  • Salt, pepper, paprika

Instructions:

  1. Heat oil in a pot, sauté onion and garlic until soft.
  2. Add ground meat and cook until browned.
  3. Stir in chopped peppers and cook for 3–4 minutes.
  4. Add tomato sauce, broth, rice, and spices.
  5. Bring to a boil, then simmer 20–25 minutes until rice is cooked.
  6. Taste and adjust seasoning.

👍 Tips to make it better

  • Add a pinch of sugar to balance tomato acidity
  • Use brown rice for extra fiber (cook longer)
  • Add chili flakes if you like heat 🌶️
  • Top with yogurt or a little cheese for richness

🥗 Why people love it

  • One-pot meal (easy cleanup)
  • Budget-friendly
  • Filling and balanced (protein + carbs + veggies)

If you want, I can give you a low-calorie or weight-loss version of this soup that still tastes amazing.
