Ingredients

  • 2 medium Zucchini, grated

  • 3–4 Egg
  • 1 cup self-raising flour (or plain flour + 1 tsp baking powder)
  • ½ cup vegetable oil
  • 2–3 slices chopped Bacon (optional)
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 180°C (350°F). Grease a baking dish.
  2. Place grated zucchini in a bowl and lightly squeeze out excess moisture.
  3. Add onion, cheese, bacon, and flour. Mix well.
  4. Beat the eggs with the oil and pour into the mixture. Stir until combined.
  5. Spread the mixture into the baking dish.
  6. Bake for 30–40 minutes until golden and firm in the center.
  7. Let cool slightly, then slice into squares.

Tips

  • Add herbs like Parsley or Basil for extra flavor.
  • You can substitute bacon with ham, feta, or vegetables.
  • Stores well in the refrigerator for 3–4 days.
